  • 1 tbsp extra virgin olive oil A drizzle of this golden oil adds a lush richness.

  • 1/2 tsp flaky sea salt A pinch of this brings all the flavors together.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wrap the golden and red beets individually in aluminum foil and place them on a baking sheet.
  • Roast for 45-50 minutes, until they are tender when pierced with a fork. Once done, let them cool.
  • When cool enough to handle, peel off the skins and slice them into 1/2-inch thick rounds, revealing their vibrant hues.

Assembly

  • Begin your towers with a slice of golden beet as the base.
  • Add a generous spoonful of creamy burrata on top, allowing it to spill around the edges.
  • Layer a slice of red beet next and repeat the layers, alternating colors, until your stack is tall and impressive.
  • End with a sumptuous mound of burrata crowned on top.

Finishing Touches

  • Sprinkle the toasted pistachios generously over the stacked beets.
  • Drizzle with extra virgin olive oil and honey, allowing it to cascade over the colorful layers.
  • Sprinkle orange zest on top, followed by flaky sea salt and a dash of black pepper for that final touch of flavor.
