Instructions

Preparation

  • Wash the baby bok choy thoroughly under cold running water to remove any dirt, and pat dry with a clean kitchen towel. Carefully separate the leafy greens from the thicker white stems. Chop them into bite-sized pieces.

Cooking

  • In a large skillet or wok, heat vegetable oil or sesame oil over medium-high heat. Add the minced garlic, grated ginger, and half of the chopped scallions. Sauté for about one minute or until aromatic.
  • Add the thicker white stems of the bok choy into the skillet first. Stir-fry for 2-3 minutes until softened slightly.
  • Add the leafy greens and continue to stir-fry for another 2 minutes, allowing them to wilt.
  • In a small bowl, combine soy sauce, rice vinegar or lime juice, chili flakes, honey, and the cornstarch slurry. Stir well and pour the sauce over the bok choy. Toss to coat.
  • Allow the sauce to simmer for 1-2 minutes until thickened. Top with toasted sesame seeds and remaining chopped scallions. Serve hot.

Notes

Customize heat level with chili flakes or oil. Add tofu or shrimp for protein. Experiment with fresh herbs for added flavor. For vegan option, substitute honey with maple syrup.
