Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine ground chicken, seasoned breadcrumbs, eggs, grated Parmesan, minced garlic, finely chopped onion, milk, parsley, Italian seasoning, salt, and black pepper.
  • Using your hands, mix until well combined. Shape the mixture into a loaf and place it onto a baking sheet lined with parchment paper.
  • Lightly brush the top of the meatloaf with olive oil.

Baking

  • Place the meatloaf in the preheated oven and bake for 45 to 50 minutes, or until the top is golden brown and the center is fully cooked. Sprinkle mozzarella cheese on top during the last 10 minutes of baking, if desired.

Serving

  • Once cooked, let the meatloaf rest for a few minutes. Then, slice it up and serve hot.

Notes

For the best texture, use lean ground chicken. You can experiment with different herbs and use a meat thermometer to ensure doneness at 165°F (75°C).
