Instructions

Preparation and Baking

  • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the ground chicken, eggs, grated Parmesan cheese, half a cup of shredded mozzarella, almond flour or breadcrumbs, milk, minced garlic, chopped parsley, onion powder, Italian seasoning, salt, and pepper. Stir until everything is well incorporated.
  • Transfer the meat mixture into your prepared loaf pan, using a spatula or spoon to smooth out the top evenly.
  • Place the loaf pan into the preheated oven and bake uncovered for 30–35 minutes until the meatloaf is cooked through and firm to the touch.
  • Once baked, remove the meatloaf from the oven and sprinkle the remaining shredded mozzarella generously on top.
  • Return the meatloaf to the oven and broil for an additional 3–5 minutes, or until the cheese is bubbly and golden brown.
  • Remove the meatloaf from the oven and allow it to rest for about 10 minutes before slicing. Garnish with fresh parsley and serve warm.

Notes

To elevate your dish, consider adding chopped bell peppers or finely diced onions to the meat mixture. Use leftovers in sandwiches or wraps for a quick lunch. For single-serving portions, use a muffin tin instead of a loaf pan!
