Instructions

Preparation

  • Start by preheating your oven to 400°F (200°C). Place the garlic cloves in a small baking dish, drizzle with a bit of olive oil, and cover. Roast for about 30-35 minutes until golden and soft.
  • Once cooled, mash the roasted garlic into a smooth paste with the back of a spoon.

Mixing

  • In a medium bowl, mix the softened unsalted butter, smooth roasted garlic paste, Dijon mustard, and fresh lemon juice. Use a spatula or whisk to blend until smooth and creamy.

Adding Herbs

  • Gently fold in the chopped parsley, thyme, rosemary, sea salt, and freshly ground black pepper. Stir well to evenly distribute the herbs throughout the butter.

Shaping and Refrigerating

  • Transfer the herb-infused butter mixture onto parchment paper or plastic wrap. Shape into a log, rolling tightly and twisting the ends to seal.
  • Place the wrapped butter in the refrigerator for at least 2 hours to firm up. Once set, slice into thick rounds.

Notes

Using fresh herbs will give the best flavor. If in a hurry, you can use store-bought roasted garlic paste.
