Ingredients

Lamb Chops Preparation

  • 5 pieces lamb loin chops Can substitute with rib chops or leg steaks.
  • 2 tablespoons melted butter Or use ghee for Whole30.
  • 3 cloves garlic, finely chopped
  • 1 teaspoon chopped fresh thyme Fresh thyme recommended but dried can be used.
  • to taste teaspoon Kosher salt
  • to taste teaspoon Freshly ground black pepper

Instructions

Preparation

  • Allow lamb chops to sit out for 20-30 minutes until they reach room temperature, then pat dry with paper towels.
  • Season both sides generously with kosher salt and freshly ground black pepper.

Cooking

  • Heat a cast-iron skillet over medium-high heat until hot.
  • Stand the lamb chops on their fat side and press down with tongs, rendering the fat for about 5 minutes.
  • Lay the lamb chops flat and sear for about 3 minutes on each side until golden-brown crust forms.
  • Reduce heat to medium-low, remove excess fat from the pan, and add the melted butter, garlic, and fresh thyme.
  • Stir until the butter begins to foam and then baste the chops with garlic butter for one minute.
  • Transfer the chops to a plate and pour the garlic butter sauce over them before serving.

Notes

Consider marinating lamb chops in garlic, herbs, and olive oil for deeper flavor. Aim for 145°F for medium-rare lamb, and let them rest for a few minutes before serving.
