Ingredients

For the filling

  • 1 lb shrimp, peeled, deveined, and chopped Opt for large shrimp for a sweeter taste.
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1/2 cup diced bell pepper
  • 1/2 cup chopped mushrooms (optional) Add for more texture.
  • 3 tbsp unsalted butter
  • 1/4 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 1/2 cups heavy cream (or whole milk) Use low-fat options for a lighter version.
  • 1/2 cup seafood or chicken broth
  • 1 tsp Old Bay seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped For garnish and flavor.

For the crust

  • 2 pieces pre-made pie crusts (or homemade) Use store-bought for convenience.
  • 1 piece egg (for egg wash) Makes the crust shiny.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Roll out one pie crust into a 9-inch pie dish. Prick the bottom with a fork and set aside.

Cooking

  • In a skillet, melt the butter over medium heat. Add the diced onion, minced garlic, bell pepper, and optional mushrooms. Sauté for about 3–4 minutes until the vegetables are softened.
  • Sprinkle the flour over the sautéed veggies and stir for 1 minute to eliminate the raw flour taste. Gradually whisk in the heavy cream and seafood broth, stirring continuously until the mixture thickens.
  • Stir in the Old Bay seasoning, salt, black pepper, and lemon juice. Add the chopped shrimp and cook for 3 minutes, just until they turn pink. Remove from heat and stir in the fresh parsley.
  • Pour the shrimp filling into the prepared crust and place the second pie crust over the filling, sealing the edges. Crimp the edges with a fork and cut small slits in the top crust for steam to escape. Brush with the beaten egg to achieve a glossy, golden finish.
  • Bake for 35–40 minutes, or until the crust is a beautiful golden brown and crisp. Allow to cool for 10 minutes before slicing.

Serving

  • Slice and serve warm with a side of lemon wedges and fresh herbs!

Notes

For a richer flavor, consider adding a splash of Worcestershire sauce or hot sauce to the filling. If short on time, use store-bought pie crusts and pre-cooked shrimp. Ensure not to overcook the shrimp in the filling as they will continue to cook while baking.
