Ingredients

For the Spicy Tomato Jam

  • 200 g cherry tomatoes (halved) Juicy and sweet, these create the base for the jam.

  • 1 tbsp apple cider vinegar Adds tanginess to the jam.
  • 1/2 tsp red chili flakes For a subtle heat.

For the Burrata Bomb

  • 1 large burrata (drained well) The star ingredient.
  • 1 egg, beaten Helps the coating adhere.
  • 2 tbsp flour Provides a base for the coating.
  • 1/2 cup panko breadcrumbs Adds a delightful crunch.
  • 1 1/2 tbsp everything bagel seasoning Elevates the dish with mixed flavors.
  • Neutral oil, for frying Essential for frying.

For Serving

  • Toasted sourdough or bagel chips Perfect accompaniment.
  • Fresh basil or chives (optional garnish) Adds color and flavor.

Instructions

Make the Spicy Tomato Jam

  • Combine halved cherry tomatoes, sugar, apple cider vinegar, red chili flakes, garlic powder, and salt in a saucepan.
  • Place over low heat and simmer for 20–25 minutes until thickened.

Prep the Burrata

  • Pat the burrata dry with paper towels and freeze for 10–15 minutes.
  • Mix panko breadcrumbs with everything bagel seasoning.

Bread the Burrata

  • Roll chilled burrata in flour, dip in beaten egg, then coat in panko mixture.
  • Freeze again for 10 minutes to set the coating.

Fry the Burrata Bomb

  • Heat 1–2 inches of oil in a small pan to approximately 180°C (350°F).
  • Fry the coated burrata for 45–60 seconds until golden brown.

Serve & Slice

  • Plate the burrata bomb and swirl warm spicy tomato jam next to it.
  • Garnish with fresh herbs and serve with toasted sourdough or bagel chips.

Notes

Try different cheeses like fresh mozzarella or ricotta. Store leftovers in an airtight container for up to 2 days.
