Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Press the pie crust into a 9-inch dish and prick the base with a fork. Bake for 8 minutes and then remove from the oven.
  • In a pan, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until soft and translucent. Then, add the chopped spinach and cook for another 2 minutes until wilted. Allow this mixture to cool slightly.
  • In a mixing bowl, whisk together ricotta cheese, eggs, heavy cream, grated Parmesan cheese, pinch of nutmeg, salt, and pepper until smooth and creamy.
  • Gently stir in the cooled spinach and onion mixture into the ricotta mixture until well combined.
  • Carefully pour the filling into the baked crust, spreading it evenly.

Baking

  • Bake the quiche in the oven for approximately 35-40 minutes, or until set and golden brown on top.
  • Allow the quiche to cool slightly before slicing. Serve warm or at room temperature.

Notes

For an even richer flavor, consider adding freshly grated nutmeg rather than pre-ground. Experiment with different cheeses like feta or goat cheese for a unique twist. You can also add other vegetables such as bell peppers or mushrooms for additional taste and nutrition.
