Preparation

  • Combine the flour, powdered sugar, and salt in a food processor. Add the cold, cubed butter, and pulse until the mixture resembles coarse crumbs.
  • Add the egg yolk and ice water, pulsing gently until the dough starts to come together. Wrap in plastic and chill for at least 30 minutes.

Baking the Tart Shells

  • Preheat the oven to 350°F (175°C). Roll out the chilled dough and press into tart molds or mini muffin tins. Poke holes with a fork and bake for 12-15 minutes until lightly golden. Allow to cool.

Making the Goat Cheese Filling

  • In a mixing bowl, beat together the goat cheese and cream cheese until smooth. Add honey, vanilla extract, and lemon zest, and blend until combined.
  • Spoon or pipe the filling into the cooled tart shells.

Preparing the Raspberry Topping

  • In a saucepan over medium heat, combine fresh raspberries, sugar, and lemon juice. Stir gently until the raspberries soften and release their juices.
  • Cook for about 5 minutes. If using cornstarch, stir it in for thickness, and let it cool.

Assembly and Serving

  • Spoon the raspberry mixture over the goat cheese filling. Garnish with fresh mint and drizzle with honey. Dust with powdered sugar if desired.
