  • 1/2 cup 1/2 cup (75g) sliced dill pickles For topping.
  • 1 tablespoon 1 tablespoon dried oregano Complementary herb.

Instructions

Preparation

  • In a small bowl, combine the warm water, pickle juice, sugar, and active dry yeast. Let sit for about 5-7 minutes until foamy.
  • In a large bowl, mix the flour and salt. Add the foamy yeast mixture and olive oil. Stir until it comes together, then knead on a floured surface for 8-10 minutes until smooth.
  • Fold in the chopped dill pickles and fresh dill evenly throughout the dough.
  • Transfer the dough to a lightly oiled bowl, cover with a damp cloth, and let rise for 1 hour in a warm place.

Shaping and Second Rise

  • Turn the risen dough onto a floured surface and roll it into a rectangle. Brush with olive oil and sprinkle with oregano and garlic powder.
  • Place the sliced dill pickles on top and roll it tightly into a loaf shape.
  • Place the loaf in a greased pan, cover, and let it rise for an additional 30 minutes.

Baking

  • Preheat oven to 375°F (190°C). Brush the top with olive oil and sprinkle with sesame and optional poppy seeds.
  • Bake for 30-35 minutes until golden brown and hollow-sounding when tapped. Allow to cool slightly before slicing.
