Instructions

Preparation

  • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, mix together the chocolate cookie crumbs and melted butter until the mixture resembles wet sand. Press it into the bottom of the prepared pan.
  • Bake the crust in the preheated oven for 10 minutes and then let it cool.

Making the Cheesecake

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the granulated sugar, mixing until well combined.
  • Pour in the sour cream and vanilla extract, beating until blended.
  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the melted chocolate and chopped strawberries.
  • Pour the cheesecake batter into the cooled chocolate crust and spread evenly.

Baking and Cooling

  • Bake for 60-70 minutes or until the center is slightly jiggly.
  • Turn off the oven and allow the cheesecake to cool inside with the door slightly ajar for one hour.
