For the Sushi Rolls

  • 1 tbsp white sesame seeds Adds a toasty note and decorative touch.
  • 1/2 tsp sea salt flakes For seasoning and balancing flavors.
  • 1/2 tsp dried nori (optional) Adds an authentic sushi flavor.
  • pinch chili flakes or togarashi (optional) For those who enjoy a bit of heat.

Instructions

Preparation

  • Begin by blending the feta, Greek yogurt, and olive oil in a food processor until smooth and creamy. Add black pepper to taste and chill slightly in the fridge.
  • Using a mandoline or a vegetable peeler, slice the cucumber lengthwise into very thin ribbons. Pat each ribbon dry with a paper towel.
  • In a mixing bowl, gently combine the whipped feta, chopped smoked salmon, fresh dill, and optional lemon zest.

Assembly

  • Lay 1 to 2 cucumber ribbons slightly overlapping each other. Place a heaping teaspoon of the filling mixture at one end and roll tightly. Secure the seam-side down on a plate.

Finishing Touch

  • In a dry skillet over low heat, lightly toast the white sesame seeds and chopped pistachios. Combine with sea salt, nori, and chili flakes.
  • Sprinkle the prepared cucumber rolls with the pistachio furikake and serve cold, optionally with soy sauce or fresh lemon juice.

Notes

Use a mandoline for perfect cucumber ribbons. Chill the filling for better flavor and easier handling. Customize your fillings as desired.
