Ingredients

For the Rolls

  • 1 large cucumber, thinly sliced lengthwise Use long, even slices for rolling
  • 100 g feta cheese, crumbled For a vegan option, use dairy-free cheese
  • 2 tbsp almonds, finely chopped Toasted almonds can enhance flavor
  • 1 tbsp honey Use maple syrup for a vegan option
  • 1 tbsp balsamic vinegar
  • to taste freshly ground black pepper Adds flavor
  • fresh mint leaves, for garnish (optional) Can substitute with other fresh herbs

Instructions

Preparation

  • In a small mixing bowl, combine crumbled feta cheese and finely chopped almonds. Mix thoroughly until well integrated.

Assembly

  • Take one cucumber slice and place a small spoonful of the feta-almond mixture at one end. Carefully roll the cucumber slice tightly around the filling and secure with a toothpick if needed.
  • Repeat this process for each cucumber slice until all ingredients are used.

Honey Balsamic Drizzle

  • In a separate mixing bowl, whisk together honey and balsamic vinegar until smooth and well-mixed.

Finish

  • Arrange the cucumber rolls on a serving platter and drizzle generously with the honey balsamic mixture.
  • Sprinkle freshly ground black pepper on top and garnish with fresh mint leaves if desired.

Notes

Refrigerate rolls a few hours ahead for best flavor. Variations include adding fresh herbs, chili flakes for spice, or using different nuts.
