  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 14.5 oz can diced tomatoes
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus extra for garnish
  • 2 tbsp fresh basil, chopped (optional) For garnish

Preparation

  • In your crock pot, add the chicken breasts, chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, and black pepper. Stir everything well to ensure the flavors meld together.
  • Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours.
  • Once cooked, carefully remove the chicken from the crock pot. Using two forks, shred the chicken into bite-sized pieces.
  • Return the shredded chicken to the crock pot. Stir in the heavy cream and 1 cup of grated Parmesan cheese, mixing until everything is well incorporated.
  • Cover the crock pot again and let it cook for an additional 20-30 minutes to thicken the soup.
  • Ladle the soup into bowls and garnish with extra Parmesan cheese and chopped fresh basil for added flavor.

Notes

For added flavor, consider sautéing the onion and garlic before adding to the crock pot. Substitute chicken with cooked rotisserie chicken to save time. Great paired with crusty bread or garlic knots.
