Ingredients

For the Sweet Potato Balls

  • 2 cups mashed roasted sweet potato Creamy and naturally sweet

For the Whipped Feta

  • 200 g feta cheese, crumbled Creamy and tangy
  • 3 tbsp Greek yogurt Adds creaminess
  • 1 tbsp olive oil Enhances flavor and texture
  • 1 zest of 1 lemon Brightens the flavor
  • to taste black pepper For finishing touch

For Serving

  • runny honey For drizzling

Instructions

Mix the Ingredients

  • In a mixing bowl, combine the mashed sweet potato, grated Parmesan, egg, smoked paprika, garlic powder, salt, and black pepper. Gradually stir in the panko breadcrumbs until the mixture is just firm enough to roll into balls.
  • Chill the mixture for about 15 minutes to help it hold shape while cooking.

Prepare the Whipped Feta

  • In a blender or food processor, combine the crumbled feta cheese, Greek yogurt, olive oil, and lemon zest. Blend until ultra-smooth and creamy.

Roll and Coat the Balls

  • Take the sweet potato mixture and roll it into small balls, about the size of a tablespoon. Coat each ball lightly in extra panko crumbs.

Fry the Balls

  • Heat enough neutral oil in a deep skillet over medium heat for frying (approximately 1–2 inches deep).
  • Carefully fry the sweet potato balls in batches until they are deeply golden and crispy, about 3-4 minutes. Transfer them to a plate lined with paper towels to drain excess oil.

Plate Up and Serve

  • Spread a generous swoosh of whipped feta on a serving plate, top with the crispy sweet potato balls, then drizzle with runny honey, and garnish with microgreens or fresh thyme.

Notes

For an extra layer of flavor, consider adding chopped fresh herbs such as thyme or parsley to the sweet potato mixture. You can bake the balls instead of frying for a healthier alternative.
