Ingredients

Filling Ingredients

  • 2 tbsp Greek Yogurt Tangy and refreshing, offering a lightness to the mixture.
  • 40 g Shelled Roasted Pistachios, Finely Chopped Nutty and crunchy, providing delightful texture contrast.
  • 1/2 unit Lemon Zest Infuses a citrusy freshness.
  • 1/2 tsp Honey (Optional) A hint of sweetness to balance the saltiness of the feta.
  • Freshly Ground Black Pepper Enhances the overall flavor.

Wrapping and Garnishing

  • 8–10 sheets Rice Paper Sheets Tender yet sturdy, providing a perfect wrap for the filling.
  • Warm Water for Soaking Essential for softening the rice paper without tearing.
  • Olive Oil Spray or Neutral Oil For brushing, ensuring a golden-brown, crispy finish.
  • Extra Crushed Pistachios For garnish, adding color and crunch.
  • Mint Leaves For garnish, fragrant and fresh.
  • Chili Flakes or Za’atar For garnish, according to preference.

Instructions

Make the Filling

  • In a food processor, blend together feta cheese, cream cheese, Greek yogurt, the zest of half a lemon, and a sprinkle of freshly ground black pepper. If desired, add honey.
  • Blend until smooth and creamy, then stir in the chopped roasted pistachios. Chill the filling briefly in the refrigerator.

Soften the Rice Paper

  • Fill a shallow bowl with warm water. Dip one rice paper sheet into the water for about 5 to 10 seconds until soft but strong.

Assemble the Triangles

  • Place the softened sheet on a clean surface. Spoon a dollop of the filling near one edge and fold the sheet over into a triangle shape.
  • Seal the edges tightly to prevent filling from escaping.

Repeat & Air Fry

  • Continue assembling the remaining samosas. Brush or spray them with oil, then arrange them in a single layer in the preheated air fryer.
  • Air fry at 200°C (390°F) for about 6 to 8 minutes, flipping halfway through until golden and crisp.

Serve & Garnish

  • Transfer the samosas to a platter. Garnish with crushed pistachios and mint leaves. Add chili flakes or za'atar if desired.
  • Serve hot with a yogurt dip or drizzle of chili oil.

Notes

For a healthier option, substitute some feta with lower-fat or dairy-free cheese. Add fine vegetable fillings for extra nutrition.
