Instructions

Preparation of Filling

  • In a large bowl, combine the whipped feta, finely chopped pistachios, fresh mint, lemon zest, and black pepper to taste. Mix until the ingredients meld together into a creamy filling.

Preparing Rice Paper

  • Gently dip each rice paper sheet into warm water for 5 to 10 seconds until just pliable.
  • Place the softened sheet on a clean, dry surface.

Rolling Parcels

  • Take 1.5 tablespoons of filling and spoon it into the center of the rice paper sheet.
  • Fold the sides in gently, then roll from the bottom up to create a tight parcel.

Cooking

  • Air fry parcels at 200°C (392°F) for 6 to 8 minutes until golden and glassy, or pan-fry in olive oil until crispy on both sides.

Serving

  • Serve warm with lemon wedges, hot honey, or a yogurt-herb dip.

Notes

Ensure rice paper is not over-soaked to maintain texture. You can experiment with different fillings or garnishes. The filling can be prepared a day in advance.
