Instructions

Preparation

  • Preheat the oven to 325°F (163°C).
  • In a small saucepan over low heat, combine the heavy cream, kosher salt, and minced garlic. Simmer for about 5 minutes, then remove from heat.
  • Thinly slice the potatoes to about 1/8-inch thickness.
  • Melt the butter in a skillet over low heat, add the shallots, and caramelize them for about 5 minutes.

Layering

  • Arrange the potato slices in an overlapping spiral pattern in the skillet.
  • Pour the infused cream evenly over the potatoes.

Baking

  • Cover the skillet with foil and bake for 1 hour and 15 minutes until the potatoes are tender.
  • Increase oven temperature to broil, sprinkle cheese over potatoes, and broil for about 5 minutes until bubbly and golden.

  • Let the gratin rest for a few minutes before serving.
