  • 2 tbsp Greek yogurt Optional for added creaminess
  • 2 tbsp melted butter or olive oil For brushing phyllo
  • 1 tsp dried oregano Aromatic and earthy, for flavoring
  • 1/2 tsp black pepper For mild heat

  • 1/2 tsp red pepper flakes For a spicy kick
  • 1/2 tsp lemon juice For brightness
  • 1 tbsp toasted sesame seeds For crunch

Instructions

Preparation of Filling

  • Blend the feta cheese, Greek yogurt (if using), dried oregano, and black pepper in a mixing bowl until well combined.

Assembling the Rolls

  • Preheat the oven to 375°F (190°C). Spread a sheet of phyllo dough on a clean surface and brush with melted butter or olive oil.
  • Place a generous spoonful of the feta mixture at one end of the sheet, roll tightly like a cigar, and fold in the sides to prevent spillage.
  • Repeat this process for the remaining sheets.

Baking

  • Arrange the rolls seam-side down on a parchment-lined baking sheet and brush the tops with melted butter or olive oil.
  • Bake for 15-18 minutes, or until golden and crispy.

Preparing the Chili Honey

  • In a small saucepan, heat the honey with red pepper flakes and lemon juice for 2-3 minutes.
  • Remove from heat and let it infuse.

Drizzling and Serving

  • Drizzle the spicy honey over the baked rolls while warm.
  • Sprinkle with toasted sesame seeds and fresh herbs before serving.

Notes

Keep phyllo sheets covered with a towel to prevent drying out. Ensure sufficient butter or oil is used for crispiness.
