Instructions

Preparation

  • In a small bowl, stir together the Greek yogurt, lemon juice, olive oil, dill (or mint), salt, and pepper until the mixture is smooth and creamy.
  • Lay your tortillas flat on a clean surface. Spread the yogurt mixture over two-thirds of each tortilla.
  • Top your spread with thin cucumber slices, crumbled feta cheese, and greens if you’re using them.
  • Fold the bottom of the tortilla up over the filling, then fold in the sides. Roll the wraps tightly from the bottom to the top.
  • Heat a skillet over medium heat and add a little olive oil. Once heated, place the wraps in the skillet to toast for 2-3 minutes per side, or until they are golden and crispy.
  • Once toasted, let them cool slightly, then cut the wraps in halves or quarters for serving.

Notes

To elevate your wraps, consider adding crushed red pepper flakes for heat, experimenting with different leafy greens, or preparing the yogurt mixture ahead of time. You can also substitute feta with goat cheese or ricotta for variations.
