Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease an 8-inch cast iron skillet or baking dish.
  • In a small bowl, mix together the melted butter, olive oil, balsamic vinegar, thyme, garlic powder, salt, and black pepper.
  • Arrange the potato slices in a circular pattern in the skillet, slightly overlapping each slice. Brush each layer with the buttery herb mixture.

Baking

  • Cover the dish with foil and bake for 40 minutes.
  • Remove the foil, sprinkle with Parmesan, and bake uncovered for an additional 20 minutes.

Serving

  • Let it cool for 5 minutes before slicing and serving warm. Garnish with extra thyme and a sprinkle of sea salt.
