Instructions

Preparation

  • Melt the butter in a large pot over medium heat until foamy and slightly golden.
  • Add the diced yellow onion with a pinch of salt and fresh cracked pepper. Sauté for about 5 minutes until translucent.
  • Toss in the minced garlic and cook for another 30 seconds, stirring constantly.
  • Stir in the taco seasoning and all-purpose flour, letting it cook for about a minute to bloom the flavors.
  • Pour in a splash of chicken stock, scraping any bits from the bottom of the pot.

Cooking

  • Add the drained pinto beans, corn, fire-roasted green chilies, green enchilada sauce, shredded rotisserie chicken, heavy cream, and the remaining chicken stock.
  • Season with salt and pepper, stir well, and bring to a gentle simmer. Let it simmer for about 10 minutes.
  • Stir in the fresh lime juice and adjust seasonings as needed.

Serving
