Instructions

Preparation

  • In a large pot, warm 1 tablespoon of olive oil over medium heat until shimmering.
  • Add 1 pound of Italian sausage to the pot. Cook and break it apart until fully browned, about 5-7 minutes. Drain excess fat if necessary.
  • Toss in the chopped onion and minced garlic, stirring until the onion is soft and translucent, approximately 3-4 minutes.
  • Pour in 4 cups of chicken broth and the can of diced tomatoes. Bring to a gentle simmer.
  • Stir in 1 cup of heavy cream, 1 cup of grated Parmesan cheese, and 1 teaspoon of Italian seasoning. Let it simmer for about 10 minutes.
  • Add 2 cups of baby spinach and cook just until wilted, about 2 minutes.
  • Finish with salt and pepper to taste before serving.
