  • 4 large large yellow onions, sliced into 1⁄4-inch rounds
  • 1 tablespoon Olive oil, for drizzling
  • 1/2 teaspoon fresh thyme, chopped

  • 1 cup heavy cream
  • 2 teaspoons Dijon mustard
  • 1/2 cup Asiago cheese, grated

Instructions

Preparation

  • Preheat your oven to 450°F (230°C) and grease a baking dish.
  • Arrange the onion slices in a single layer in the baking dish.
  • Drizzle olive oil over the onions and season with fresh thyme, salt, and pepper.

Roasting

  • Roast the onions in the preheated oven for about 20 minutes until they soften and begin to caramelize.

Sauce Preparation

  • In a saucepan, bring the heavy cream to a simmer over medium heat, stirring occasionally.
  • Mix in the Dijon mustard and half of the grated Asiago cheese until melted and well combined.

Assembly and Baking

  • Once the onions are done roasting, pour the creamy mixture over them to coat.
  • Top with the remaining grated Asiago cheese, cover with foil, and return to the oven for another 20 minutes.
  • After baking, the onions should be tender and bubbly.

Notes

For variations, you can try different types of onions, add garlic or spinach for extra flavor, and substitute heavy cream with lighter alternatives as desired.
