Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice each chicken breast horizontally to create a pocket.
  • In a mixing bowl, combine sautéed spinach and cranberries, then stuff each chicken pocket with the mixture and layers of Brie.
  • Secure the opening of each stuffed chicken breast with toothpicks and rub with olive oil, then season with salt, pepper, and garlic powder.

Cooking

  • Heat an oven-safe skillet over medium heat and sear the stuffed chicken breasts for 2-3 minutes on each side.
  • Drizzle honey over each breast and transfer the skillet to the oven to bake for 20-25 minutes.
  • Check that the chicken has reached an internal temperature of 165°F (74°C) using a meat thermometer.
  • Remove toothpicks and garnish with fresh rosemary before serving.
