Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Clean the mushrooms and remove the stems. Lightly brush the mushroom caps with olive oil, seasoning them with salt and pepper.
  • In a medium bowl, mix together the lump crab meat, softened cream cheese, Parmesan cheese, shredded mozzarella, mayonnaise, minced garlic, lemon juice, and chopped parsley. Add Old Bay seasoning if desired.
  • Spoon generous amounts of the crab mixture into each mushroom cap.
  • Sprinkle the tops with extra Parmesan cheese.

Baking

  • Bake for 18-20 minutes, or until the mushrooms are tender and the filling is golden.
  • Sprinkle with fresh parsley before serving.

Notes

For added flavor, consider mixing in some diced jalapeños or chopped green onions. Customize the herbs for personal preference. For a lighter version, substitute with low-fat cream cheese and Greek yogurt.
