Ingredients

For the Sweet Potatoes

  • 1/2 piece yellow bell pepper, diced Adds visual appeal and sweetness.
  • 1/2 small red onion, finely chopped Aromatic and slightly sharp.
  • 1 piece jalapeño, minced (optional) Adds heat to the dish.
  • 1 medium tomato, diced and seeded Enhances freshness.
  • Juice of 1 lime Brightens all the flavors.
  • 2 tbsp olive oil Adds richness to the caviar.
  • 2 tbsp chopped fresh cilantro Elevates the flavor profile.
  • to taste salt & pepper Seasoning for balance.

For Serving

  • to taste Greek yogurt or sour cream For a creamy and tangy finish.
  • to taste Extra cilantro or sliced avocado (optional) For garnishing.

Instructions

Preparation

  • Preheat your oven to 200°C (400°F).
  • Scrub sweet potatoes under running water and prick each several times with a fork.
  • Rub olive oil over each potato and sprinkle with salt and pepper. Place on a baking tray.

Roasting Sweet Potatoes

  • Roast sweet potatoes for 45-60 minutes, or until fork-tender.

Making Cowboy Caviar

  • In a large bowl, mix black beans, corn, diced bell peppers, chopped red onion, minced jalapeño (if using), and diced tomato.
  • Squeeze lime juice over the mixture, drizzle with olive oil, and add chopped cilantro.
  • Season with salt and pepper, and toss gently to combine. Chill in the refrigerator.

Assembling the Dish

  • Once sweet potatoes are roasted, let them cool slightly. Slice each open lengthwise and fluff the flesh.
  • Spoon the chilled cowboy caviar generously over each potato, and top with Greek yogurt or sour cream.
  • Garnish with extra cilantro or sliced avocado if desired.

Notes

Tip: Allow the caviar to chill for at least 30 minutes to let flavors meld. For variations, consider using quinoa instead of beans or adjusting spice levels.
