Ingredients

  • 1 large egg

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour Can use whole wheat flour for healthier option.
  • 1/4 cup granulated sugar Reduce for a less sweet option.
  • 1 tbsp baking powder
  • 1/2 tsp salt

Cheese and Toppings

  • 1 cup smoked Gouda cheese, shredded Can substitute with cheddar or pepper jack.
  • 1/4 cup honey Warm before drizzling.
  • Fresh thyme or rosemary, for garnish Optional, for added flavor.

Instructions

Preparation

  • Preheat your waffle iron as directed by its instructions.
  • In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together buttermilk, melted butter, and egg until combined.
  • Slowly pour the wet ingredients into the dry, stirring gently until just mixed.

Cooking

  • Lightly grease the preheated waffle iron.
  • Using a spoon, pour 1-2 tablespoons of the batter into each section of the waffle iron.
  • Close the lid and let cook for about 3-4 minutes or until crisp and golden.
  • Place the cooked waffle bites on a baking sheet.
  • Sprinkle generously with shredded smoked Gouda.
  • Preheat your oven to 350°F (175°C) and bake for 3-5 minutes, or until cheese melts.
  • Drizzle warm honey over the baked waffle bites and garnish as desired.

Notes

Store leftovers in an airtight container for up to three days or freeze for up to one month. Reheat in a toaster oven.
