Instructions

Preparation

Cooking

  • Roast the tomatoes for 2–2.5 hours, checking occasionally.
  • In a food processor, blend the avocado, lime juice, lime zest, Greek yogurt, and salt until smooth.

  • Spread the avocado swirl on a plate and layer the confited tomato slices on top.
