For the Crust

Instructions

Preparation

  • Dissolve Coffee Powder: In a small bowl, combine the instant coffee powder with hot water. Mix until dissolved and set aside to cool.
  • Whip Cream Mixture: In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Refrigerate to keep it chilled.
  • Melt the Chocolates: Melt the dark chocolate, milk chocolate, and butter together in a microwave-safe bowl, heating in short bursts and stirring until smooth. Let cool slightly.
  • Prepare the Crust: Mix the chocolate cookie crumbs with the melted butter and press the mixture evenly into the bottom of a 9-inch springform pan.
  • Combine Coffee and Cream: Gently fold the cooled coffee mixture into the whipped cream until fully integrated, then fold in the melted chocolate mixture until no streaks remain.
  • Create the Mousse Layer: Pour the mousse mixture over the prepared crust, spreading evenly.
  • Chill the Cake: Place in the refrigerator for at least 4 hours or overnight to allow the mousse to set.

Notes
