Ingredients

For the Lemon Butter Garlic Sauce

For the Pasta

  • 8 oz spaghetti Soaks up flavors.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the halved tomatoes with olive oil, minced garlic, salt, and pepper. Spread onto a baking sheet and roast for about 20 minutes.

Cooking the Chicken

  • Season the sliced chicken with salt, smoked paprika, and Italian seasoning.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Sear the chicken for about 5 minutes on each side until golden brown.
  • Remove chicken from the skillet and let it rest for 5 minutes before slicing.

Making the Sauce

  • In the same skillet, add lemon slices, minced garlic, and butter. Sauté for approximately 2 minutes until fragrant.
  • Remove the lemon slices, leaving behind the oils in the sauce.

Boiling the Pasta

  • Cook spaghetti in salted water until al dente. Reserve ½ cup of pasta water, then drain.
  • Add spaghetti to the skillet, tossing in the lemon butter sauce.

Assembly

  • Plate a serving of pasta and top with sliced chicken and roasted tomatoes.
  • Tear burrata over the top and sprinkle with chopped basil and pine nuts. Serve immediately.

Notes
