Instructions

Preparation

  • In a mixing bowl, combine cream cheese, mozzarella cheese, chopped parsley, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
  • Take the boneless chicken thighs and carefully slice a pocket into each one, being cautious not to cut all the way through.
  • Generously stuff each chicken thigh with the creamy mixture. Use toothpicks to secure the opening if needed.
  • In a separate bowl, whisk together the eggs and milk until well combined.
  • In another bowl, mix panko breadcrumbs, grated Parmesan cheese, Italian seasoning, paprika, and melted butter until combined.

Assembly and Baking

  • Dip each stuffed chicken thigh into the egg wash, allowing excess to drip off, and coat them with the breadcrumb mixture, pressing gently to adhere.
  • Arrange the coated chicken in a greased baking dish, spaced out for even cooking.
  • Preheat your oven to 375°F (190°C) and bake for 25-30 minutes, until the crust is golden brown and the interior is fully cooked.
  • Garnish with extra chopped parsley and serve hot with your favorite sides.

Consider using fresh herbs like basil or oregano for different flavors. Double-dip the chicken in egg wash for an extra crunchy coating. Alternatively, use chicken breasts if preferred, but avoid overcooking.
