Chicken Preparation

Creamy Sauce

Instructions

Preparation

  • Butterfly each chicken breast and pound to about 1/2 inch thick. Season both sides with salt, pepper, and Italian seasoning.

Sauté the Mushrooms

  • In a skillet over medium heat, melt butter and add minced garlic. Cook for about 30 seconds until fragrant.
  • Add sliced mushrooms along with salt and thyme. Sauté until browned and tender for about 5-6 minutes.
  • Remove from heat and let cool slightly.

Assemble the Rolls

  • Lay out each seasoned chicken breast and spoon the mushroom mixture onto each breast. Sprinkle mozzarella and Parmesan cheese on top.
  • Carefully roll the chicken breasts tightly and secure with toothpicks.

Sear the Chicken

  • Heat olive oil in a skillet over medium-high heat. Place the chicken rolls seam-side down and sear until golden, about 8-10 minutes total.
  • Remove from skillet and set aside.

Make the Sauce

  • In the same skillet, add more butter and whisk in flour to create a roux.
  • Gradually add chicken broth while whisking, then stir in cream. Simmer until thickened.
  • Mix in mozzarella cheese and season to taste.

Bake & Finish

  • Preheat oven to 375°F (190°C). Place seared chicken in a baking dish and pour sauce over the top.
  • Bake uncovered for 20-25 minutes until chicken is cooked through and the top turns golden brown.
  • Garnish with fresh chopped parsley.

Notes

Marinate the chicken for extra flavor, experiment with different types of mushrooms and cheeses, adjust flour for sauce thickness.
