Instructions

Preparation

  • Preheat your oven to 400°F (200°C), and line a baking tray with foil or use an oven-safe skillet.
  • Bring a large pot of water to a boil and cook the corn for 5–6 minutes until slightly tender. Drain and set aside.
  • In a bowl, mix the melted butter, minced garlic, parsley, salt, and smoked paprika.

Baking

  • Place the corn on the baking tray and brush each cob thoroughly with the garlic butter mixture.
  • Sprinkle the shredded cheese generously over each buttered cob.
  • Bake for 10 minutes, then switch to broil for 2–3 minutes until the cheese bubbles and slightly browns.

Serving

  • Sprinkle a little extra parsley on top and serve hot, with lime wedges if desired.
