Zucchini Preparation

Instructions

Preparation

  • Lay the zucchini slices out on a tray, sprinkling them liberally with salt. Let them rest for 15-20 minutes to draw out that excess water.
  • Pat each slice dry with paper towels.

Sauté the Base

  • In a skillet, heat one tablespoon of olive oil over medium heat.
  • Toss in the finely chopped onion, stirring until soft for about 3-5 minutes.
  • Add the minced garlic and continue to sauté for an additional minute.

Make the Cream Sauce

  • Lower the heat and stir in the heavy cream, Dijon mustard, nutmeg, salt, and pepper.
  • Let this mixture simmer for about 2-3 minutes before removing it from the heat.

Layer the Dish

  • Preheat your oven to 200°C (400°F), and grease a baking dish.
  • Begin layering your zucchini slices, spooning over the creamy sauce, and scattering cheese generously throughout. Repeat for 2-3 layers.

Top & Bake

  • Finish off with the remaining cheese and a touch of extra Parmesan on top.
  • Bake the gratin uncovered for 25-30 minutes until golden and bubbling.

Garnish & Serve

  • Allow your creation to cool slightly, then sprinkle with the freshly chopped herbs.
  • Serve warm and enjoy.

Notes

Consider swapping heavy cream for a lighter option. This gratin is feta-free by default, avoiding any low-quality cheese for the best flavors. Allow it to rest before serving for improved presentation.
