Instructions

Preparation

  • Preheat the oven to 175°C (350°F) and prepare an 8-inch round or square baking pan by greasing and lining it with parchment paper.
  • In a large bowl, whisk together the flour, rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  • In a separate bowl, beat the eggs with both sugars until blended smoothly. Stir in the oil, Greek yogurt, and vanilla extract.

Baking

  • Pour the wet mixture into the bowl with the dry ingredients and gently stir until just combined.
  • Fold in the grated carrots, raisins, and nuts (if using) until evenly distributed.
  • Transfer the batter into the prepared baking pan and smooth the top.
  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely in the pan.

Frosting (Optional)

  • If frosting, combine softened cream cheese, yogurt, maple syrup, and cinnamon in a bowl, beat until smooth, and spread over the cooled cake.

Notes

For the best results, measure your flour and oats properly to avoid a dense cake. You can substitute half of the oil with unsweetened applesauce for moisture. Consider using a dash of ginger or allspice for extra flavor.
