Instructions

Prepare the Caramel Sauce

  • In a medium saucepan over medium heat, melt 1 cup of granulated sugar, stirring constantly until it turns a deep amber color.
  • Once the sugar has achieved its rich color, add 6 tablespoons of unsalted butter, stirring until melted and fully combined.
  • Carefully remove from heat and slowly drizzle in 1/2 cup of heavy cream, stirring continuously until you achieve a smooth consistency.
  • Add 1/4 teaspoon of salt to enrich the flavors. Allow to cool slightly.

Prepare the Cheesecake Mousse

  • In a large mixing bowl, beat 2 packages of softened cream cheese until it reaches a smooth, creamy texture.
  • Gradually add in 1/2 cup of powdered sugar, beating thoroughly until well combined.
  • In a separate bowl, whip 1 cup of heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Divide the mixture into two halves, adding 1 teaspoon of vanilla extract to one half and mix, while stirring 1/4 cup of strong brewed coffee and 1/2 cup of melted semi-sweet chocolate chips into the other half.

Assemble the Mousse

  • Layer the desserts by placing spoonfuls of the vanilla cheesecake mousse and then the chocolate coffee cheesecake mousse into serving glasses.
  • Alternate the layers until you reach the top, drizzling with your freshly made caramel sauce in between the layers.
