Instructions

Preparation

  • In a mixing bowl, combine cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and black pepper. Toss gently and chill in the fridge for about 30 minutes.

Cooking the Pasta

  • Boil water in a large pot, season with salt, and cook spaghetti according to package instructions until al dente. Drain and set aside, reserving some pasta water.

Cooking the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken, sprinkle with Italian seasoning, and cook for 5-7 minutes until golden brown.

Combine the Flavors

  • In the same skillet, add remaining olive oil and the chilled tomato mixture. Cook for about 1 minute until warmed through.

Toss Everything Together

  • Add cooked spaghetti and chicken to the skillet. Toss until well combined, adding reserved pasta water if necessary.

Serve and Garnish

  • Divide pasta into bowls, top with Parmesan cheese, and drizzle with balsamic glaze if desired. Serve warm.

Notes

Consider marinating chicken in olive oil, lemon juice, and Italian seasoning. Substitute cherry tomatoes with sun-dried tomatoes for a different flavor. Use fresh mozzarella instead of Parmesan for creaminess.
