  • 1/3 cup coconut aminos (or soy sauce) Lends umami depth.
  • 2 cups beef broth or bone broth Essential for braising.
  • 1 bundle fresh thyme Elevates the dish with an herbal note.
  • 1 bay leaf bay leaf Contributes subtle depth.
  • 3 cloves garlic, minced Brings warmth to the dish.
  • 3 tablespoons tomato paste Adds sweetness and complexity.

Instructions

Preparation

  • Season the beef short ribs generously with salt and pepper.
  • In a heavy pot, heat the ghee or butter over medium-high heat.
  • Sear the ribs on all sides until browned, about 12 to 15 minutes, then set aside.

Cooking the Sauce

  • In the same pot, add the sliced onion and minced garlic. Cook for 2 to 3 minutes until softened and fragrant.
  • Pour in the coconut aminos and balsamic vinegar, scraping the bottom to loosen browned bits.
  • Stir in the tomato paste and flour until blended, then gradually whisk in the beef broth until smooth.
  • Return the ribs to the pot with the thyme and bay leaf, cover, and transfer to an oven preheated to 350°F (175°C).
  • Allow the ribs to braise for 2 hours.

Serving

  • After 2 hours, remove the pot from the oven, discard the thyme and bay leaf.
  • Serve the ribs with sauce poured over, alongside your favorite sides.

Notes

For deeper flavor, marinate ribs in seasoning and some balsamic vinegar overnight. If a thicker sauce is desired, simmer leftover liquid after braising.
