Instructions

Preparation

  • Mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press into the bottom of a greased 9-inch springform pan and chill.

Cooking the Blueberry Layer

  • In a saucepan, combine fresh blueberries, sugar, lemon juice, and cornstarch. Heat over medium until thickened, then cool.

Whipping the Cream Cheese Filling

  • Beat the softened cream cheese until smooth. Gradually mix in powdered sugar, lemon zest, egg, and vanilla extract.

Assembling the Cake

  • Spoon half of the blueberry mixture over the chilled crust. Pour cream cheese filling on top, then swirl in remaining blueberry mixture.

Making the Crumble Topping

  • Mix flour, brown sugar, and cinnamon. Add cubed butter and combine to form crumbs. Sprinkle over the cake.

Baking
