Instructions

Preparation

  • Combine the blueberries, balsamic vinegar, and brown sugar in a small saucepan over medium heat.
  • Stir occasionally, mashing the berries to release juices, and allow to simmer for about 5 minutes until it thickens slightly.
  • Remove from heat and strain the mixture through a fine-mesh strainer to discard skins and seeds.

Assembling the Sandwich

  • Spread blueberry mixture on one slice of bread.
  • Layer half of the chosen cheese on top, followed by the spinach or arugula, and then the remaining cheese.
  • Sprinkle with black pepper and cap with the second slice of bread.

Grilling

  • Preheat a skillet over medium heat.
  • Cook the sandwich for about 3-4 minutes on each side, pressing down gently with a spatula.
  • Aim for a golden-brown crust and melted cheese.

  • Let the sandwich rest for a minute before slicing in half.
