For the Salmon

For the Filling

For the Sauce

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, combine the smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
  • Rub the spice mixture evenly over each salmon fillet.
  • In another bowl, stir together the sautéed spinach, mozzarella, Parmesan, and minced garlic.
  • Carefully cut a pocket into each salmon fillet.
  • Generously stuff each fillet with the spinach and cheese mixture.

Cooking

  • Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed salmon and sear for 2–3 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for an additional 10–12 minutes, or until the salmon flakes easily with a fork.

Serving

  • In a small pan, melt the unsalted butter over low heat. Add the lemon juice and stir until combined.
  • Drizzle the lemon-butter sauce over the baked salmon and serve immediately.

Notes

Don’t overcook the salmon and use fresh ingredients for the best flavor. Feel free to customize the spices and stuffing ingredients to suit your taste.
