Ingredients

For the crust

  • 1.5 cups old-fashioned oats for a chewy texture
  • 1 cup all-purpose flour creating the perfect base
  • 0.5 cup brown sugar for depth of sweetness
  • 0.5 teaspoons baking powder helping it rise
  • 0.25 teaspoons salt enhancing overall flavor
  • 0.5 cup unsalted butter, melted adding richness
  • 1 teaspoon vanilla extract for warmth

For the filling

  • 2 cups blackberries deliciously tart
  • 2 pieces apples, peeled, cored, and diced sweet and succulent
  • 0.25 cup granulated sugar to sweeten the filling
  • 1 tablespoon fresh sage, chopped herbaceous and fragrant
  • 1 tablespoon lemon juice for brightness
  • 2 tablespoons cornstarch to thicken the filling

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish.
  • In a mixing bowl, combine the oats, flour, brown sugar, baking powder, and salt. Stir until well combined.
  • Pour in the melted butter and vanilla extract. Mix until the mixture becomes crumbly.
  • Press 2/3 of the oat mixture firmly into the bottom of the prepared baking dish.

Cooking

  • In a saucepan, combine blackberries, diced apples, granulated sugar, chopped sage, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the fruit softens and the mixture thickens (about 5-7 minutes).
  • Pour the blackberry, sage, and apple filling over the oat crust, spreading it evenly.
  • Sprinkle the remaining oat mixture over the filling, creating a crumbly topping.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  • Allow the bars to cool completely in the dish before cutting into squares.

Notes

For optimal results, add more sugar for a sweeter bar or swap sage for thyme. Enhance with nuts or spices like cinnamon.
