Instructions

Preparation of crust

  • In a mixing bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Stir until well combined.
  • Press 2 tablespoons of the mixture into the bottom of each jar.
  • Place the jars in the fridge to chill.

Making cheesecake layer

  • In another bowl, beat the softened cream cheese with powdered sugar, lime juice, and vanilla extract until smooth.
  • Gently fold in the whipped topping to create a light and airy mixture.
  • Spoon this cheesecake mixture over the crust in each jar.

Preparing blackberry mousse

  • In a blender, blend together fresh blackberries, sugar, and lime juice until smooth.
  • Strain the mixture to remove seeds for a smoother texture (optional).
  • Fold the blackberry puree into remaining whipped topping.
  • Spoon this mousse layer over the cheesecake layer in the jars.

Finishing touches

  • Top each jar with whole blackberries and a sprinkle of remaining graham cracker crumbs.
