Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the French baguette into 1/2-inch rounds and arrange on a baking sheet. Drizzle with olive oil and sprinkle with salt.
  • Bake the baguette slices for about 5 minutes or until lightly golden.
  • Flip the baguette slices and bake again for an additional 3-5 minutes until golden and crisp.
  • In a small pan over medium heat, combine half of the blackberries with balsamic vinegar and the sprig of rosemary. Simmer for about 5 minutes, mashing the berries slightly with a fork.
  • Remove from heat, discard the rosemary, and mix in the remaining blackberries.
  • In a bowl, combine goat cheese with heavy cream, lemon zest, salt, and pepper, whisking until smooth and creamy.

Assembly

  • Spread a generous layer of the goat cheese mixture onto each toasted baguette slice.
  • Top with the blackberry mixture, adding a small piece of rosemary as garnish if desired.

Notes

To elevate your crostini, prepare the blackberry mixture and goat cheese spread in advance. Assemble just before serving for optimal crispness. Experiment with herbs or add nuts for extra crunch.
