Ingredients

For the Cake

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk Can substitute with milk + vinegar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup brewed strong coffee, cooled
  • 1 tablespoon black food coloring (optional)

For the Frosting

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, vegetable oil, eggs, vanilla extract, and brewed coffee. Stir well.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. If using black food coloring, stir it in.
  • Pour the batter evenly into the prepared cake pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in their pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Frosting

  • In a large bowl, beat the softened cream cheese and butter until creamy and smooth.
  • Gradually add the powdered sugar, mixing until fluffy, and then mix in the vanilla extract.

Assembly

  • Place one layer of the cake on a serving plate, spread cream cheese frosting on top, and layer the second cake on top.
  • Cover the entire cake with the remaining frosting and decorate as desired.

Notes

Let ingredients come to room temperature for a smoother batter. Don’t overmix to keep the cake light and fluffy. Start checking cakes a few minutes before the recommended baking time.
