Instructions

Preparation

  • Begin by bringing a pot of salted water to a boil. Carefully add the thinly sliced potatoes and parboil them for about four minutes. After four minutes, drain the potatoes and set them aside.
  • Heat one tablespoon of oil in a wok or a large skillet over high heat. Once the oil is shimmering, add the sliced beef in a single layer, allowing it to sear undisturbed until browned on one side. Flip to brown the other side, then remove the beef from the pan and set it aside.
  • In the same pan, add the remaining tablespoon of oil. Once hot, add the sliced onions, minced garlic, and grated ginger. Stir-fry until fragrant, about 1-2 minutes. Then, add the parboiled potato slices and cook, tossing frequently, until they start to turn golden brown.

Combining

  • Return the previously seared beef to the pan and pour in the soy sauce, oyster sauce, hoisin sauce, and brown sugar. Stir carefully to ensure the beef and potatoes are well-coated.
  • Add the cornstarch slurry to the pan, stirring continuously until the sauce thickens slightly.

Finishing

  • Stir in the chopped scallions and drizzle the sesame oil over the stir fry. Mix well to incorporate all the flavors.
  • Serve the Beef and Potato Stir Fry hot over rice or tossed with noodles.

Notes

For even more flavor, try marinating the beef briefly in some soy sauce and cornstarch before cooking. You can add other vegetables like bell peppers or broccoli. For heat, use red pepper flakes or sliced fresh chili. Topping with sesame seeds adds a nice crunch.
