Ingredients

For the Chicken Mixture

  • 2 1/2 cups shredded roasted chicken Tender and juicy, this chicken adds the ultimate goodness.
  • 2 tablespoons olive oil A light drizzle to enhance flavor while sautéing.
  • 1 teaspoon Worcestershire sauce A rich umami kick that deepens the overall taste.
  • 1/2 teaspoon paprika A hint of smokiness that complements the BBQ sauce beautifully.
  • 1 small red onion, thinly sliced Sweet and aromatic, adding layers of flavor.
  • 1 cup BBQ sauce The star of the show, providing that sweet and tangy essence.
  • 3 cloves garlic, minced Aromatic goodness that packs a flavorful punch.

For the Sandwich Assembly

  • 12 slices Havarti cheese Creamy and melty, the perfect cheese choice for sandwiches.
  • 2 teaspoons parsley, finely chopped A fresh touch that adds color and flavor.
  • 1/4 cup butter Ensures that the bread reaches that perfect golden crisp.
  • 12 slices sourdough or white sandwich bread The ideal vessel for this delicious filling.

Instructions

Sauté the Onions and Chicken Mixture

  • Heat the olive oil in a large pan over medium heat. Once the oil is shimmering, add the thinly sliced red onion. Cook for about 2 minutes until the onions become soft and translucent.
  • Stir in the minced garlic followed closely by the shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Cook for another 2-3 minutes, allowing the flavors to meld beautifully.

Prepare the Butter Mixture

  • In a microwave-safe bowl, combine the butter, remaining minced garlic, and parsley. Microwave for about 30 seconds until melted. Once melted, stir well and set aside to cool slightly.

Assemble the Sandwiches

  • Flip the bread slices so that the unbuttered side is facing up. Generously spread the garlic butter mixture over one side of each slice.
  • Place 6 slices of bread (buttered side down) in a skillet or griddle. On each slice, layer a slice of Havarti cheese, followed by a generous scoop of the chicken mixture, and then another slice of Havarti cheese. Top each with the remaining bread slices (buttered side up).

Cook the Sandwiches

  • Heat the skillet over medium heat. Once hot, carefully place the sandwiches into the skillet. Cook them for about 3-5 minutes on each side, or until the bread turns golden brown and the cheese has melted thoroughly.

Notes

Use leftover chicken or try different cheeses for variations. Add veggies for extra nutrition. Grill for extra crispiness.
