Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the peeled and cut carrots with olive oil, salt, and black pepper until evenly coated.
  • Spread the carrots onto the lined baking sheet in a single layer.

Cooking

  • Roast the carrots in the preheated oven for 20–25 minutes, flipping them halfway through for even cooking.
  • In the last five minutes of roasting, mix balsamic vinegar and honey in a small bowl and drizzle the glaze over the carrots.
  • Continue roasting the carrots for an additional 5 minutes until they are tender and glossy, adding thyme just before serving.

Notes

Store leftover roasted carrots in an airtight container in the refrigerator for up to five days. Reheat in the oven at 350°F (175°C) for 8-10 minutes.
